What makes extra virgin olive oil different?

Extra virgin olive oil is the highest quality olive oil available. It’s made from fresh olives that are cold pressed without heat, chemicals or refining, preserving the oil’s natural flavour, aroma and nutrients.

To be classified as extra virgin, olive oil must meet strict standards:

• Cold extracted, olives are pressed mechanically, not chemically
• Low acidity, must be less than 0.8% free acidity
• No defects, must taste fresh, clean and balanced
• Unrefined, no heat or chemical processing

High quality extra virgin olive oil is often bright, bold and slightly peppery, a natural sign of freshness and beneficial polyphenols.

At Elle Olive, our oil is early harvest extra virgin olive oil, with 0.24% acidity placing it in the excellent range. Olives are picked earlier in the season for maximum flavour, freshness and nutritional benefits.

This is olive oil designed to be drizzled, dipped and dressed, not hidden away.

What are the health benefits to extra virgin olive oil?

Extra virgin olive oil is valued not only for its flavour, but also for its natural health benefits. Because it is cold extracted and unrefined, extra virgin olive oil retains beneficial compounds that are often lost in more processed oils.

High quality extra virgin olive oil contains:

• Polyphenols, natural antioxidants that help protect cells from oxidative stress

What are polyphenols?

Polyphenols are naturally occurring compounds found in fresh olives. They contribute to both the flavour and health benefits of extra virgin olive oil.

Higher polyphenol oils often have:

• A slightly peppery finish at the back of the throat

• A fresh, grassy or vibrant flavour

• Greater antioxidant properties

Early harvest oils, like Elle Olive, typically contain higher levels of polyphenols, as olives are picked while still green and nutrient rich.

Extra virgin olive oil is a cornerstone of the Mediterranean diet, which has been widely studied for its association with heart health and longevity.

How long does olive oil last?

Extra virgin olive oil is best enjoyed within 18 to 24 months of harvest, when flavour, freshness and nutritional benefits are at their peak.

Like fresh juice, olive oil does not improve with age. It is at its best when it is fresh and vibrant.

Once opened, we recommend using your olive oil within 3 to 6 months for optimal flavour and quality. While it will still be safe to use beyond this, the brightness and peppery notes may gradually soften over time.

To help extend freshness:

• Keep in a cool, dark place
• Keep the lid tightly sealed
• Avoid heat and direct sunlight

How should I store olive oil?

Extra virgin olive oil is comfortable at room temperature, so there is no need to refrigerate. Simply keep it:

• Away from direct sunlight
• Away from heat sources like stovetops
• Out of sunny windows
• Sealed tightly when not in use

Light, heat and air are the main factors that can reduce freshness over time.
